Muffins


EASY MUFFINS

This is a very basic recipe, but it can be varied so many ways. It calls for rice bran but if that is not available try some ground flax seeds. You can always skip the ingredient, but both are good sources of fiber.

1 ¾ cups Sylvan Border Farm General Purpose Flour
1 tablespoon rice bran
3 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon xanthan gum

Blend and set aside.

¼ cup vegetable oil
½ cup honey (you can substitute ¼ cup of sugar)
2 eggs slightly beaten
¾ cup buttermilk

Combine oil, honey, eggs, and buttermilk. Add the liquid mixture to the dry ingredients and stir until just moistened. A number of ingredients can be added to this recipe --- ¼ cup diced dried apricots, or ½ cup blueberries, or ¼ cup finely diced apples, or ¼ cup chopped nuts. Spoon batter into muffin tins. Bake at 350° for 15 minutes. Makes 10-2 ½ inch muffins.
