Why Gluten-Free?

There is growing interest by doctors, food researchers and nutritionists into the health problems that can be triggered by gluten consumed in normal diets. Those with food allergies or sensitivities, candida, or autism are among those following a gluten-free diet. Others follow it simply to add nutritional benefits to their diets.

People with true gluten intolerance, celiac disease and dermatitis herpetiformis, must avoid all foods that contain gluten.

Celiac Disease occurs when a protein called gluten causes an immune reaction in the small intestine. It causes the villi to shrink and disappear and you lose the ability to absorb nutrients.

Dermatitis Herpetiformis is a severely itchy skin condition that starts as little bumps but can become blisters. IgA deposits under the skin cause the blisters. They occur as a result of ingesting gluten.
